  • 3 boneless, skinless chicken breasts
  • 2 tablespoons fajita seasoning
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 large onions
  • 1 cup Tex-Mex cheese
  • 8 tortillas
  • Olive oil and butter for cooking

Instructions

  1. Season chicken strips with fajita seasoning.
  2. Heat olive oil in a large skillet over medium heat and cook chicken until no longer pink. Set aside.
  3. In the same skillet, sauté onions until translucent, then add bell peppers and remaining seasoning; cook until tender.
  4. Return chicken to the skillet; mix well.
