  • 1.52 lb center-cut beef tenderloin
  • 2 tbsp olive oil
  • Salt and pepper
  • 2 tbsp unsalted butter
  • 2 shallots, finely chopped
  • 1 cup dry red wine
  • 1 cup beef stock
  • Thyme sprig
  • Bay leaf

Instructions

  1. Remove the beef from the fridge and let it sit at room temperature for 30–60 minutes. Pat dry and season with salt and pepper.
  2. Preheat the oven to 200°C (400°F) and heat olive oil in an ovenproof skillet over medium-high heat.
  3. Sear the beef on all sides until browned (about 2 minutes per side). Transfer the skillet to the oven and roast for 15–20 minutes until it reaches an internal temperature of 115°F (46°C).
  4. Allow the beef to rest covered with foil for 10 minutes before slicing.
  5. In the same skillet, sauté shallots, add red wine, reduce by half, then add beef stock, thyme, and bay leaf. Simmer until slightly reduced and finish with butter.
