  • 2 pounds chuck steak, cubed
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 large tomatoes, diced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups beef broth

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onions until translucent (3-4 minutes), then add garlic and cook for another minute.
  2. Add cubed chuck steak and brown on all sides.
  3. Stir in chopped bell peppers and cook for a couple of minutes.
  4. Mix in tomato paste and diced tomatoes; cook for another 2-3 minutes.
  5. Sprinkle flour over the mixture; stir to combine and cook for an additional minute.
  6. Pour in beef broth and season with salt, black pepper, cumin, and chili powder; bring to a boil then reduce heat to low.
  7. Cover the pot and let it simmer on low heat for about 2 hours until the beef is tender, stirring occasionally.
