  • 500 grams lean beef mince
  • 23 medium potatoes
  • 2 tablespoons olive oil (divided)
  • Lettuce (shredded)
  • Cheese (dairy-free or regular)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Mix spice ingredients and set aside.
  3. Cut potatoes into chips; toss with olive oil and half of the spice mix.
  4. Bake potato chips on a baking tray for 30-40 minutes until crispy.
  5. In a frying pan, heat remaining olive oil and cook beef mince until browned; add remaining spice mix.
  6. Combine burger sauce ingredients in a small bowl.
  7. Assemble bowls with crispy chips, beef mince, lettuce, cheese, pickles, and drizzle with sauce.
