  • 2 pints cherry or grape tomatoes, cut in half
  • 1 tablespoon olive oil
  • 1/2 tablespoon granulated sugar
  • 1 minced garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups farro, cooked
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pine nuts
  • 1/4 cup mixed fresh herbs (such as parsley, chives, oregano)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons champagne vinegar
  • 1 1/2 tablespoons honey
  • 2 garlic cloves, finely minced or crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil, extra virgin

Instructions

  1. Preheat your oven to 400°F (200°C). Place halved cherry tomatoes on a baking sheet, drizzle with olive oil, sprinkle with sugar, garlic, salt, black pepper, and thyme.
  2. Roast for 25–30 minutes until soft and caramelized; then let cool slightly.
  3. In a bowl, whisk together lemon juice, champagne vinegar, honey, minced garlic, salt, pepper, and extra virgin olive oil.
  4. In a large mixing bowl, combine roasted tomatoes with cooked farro. Add feta cheese, pine nuts, and fresh herbs; pour dressing over the top and toss gently.
  5. Adjust seasoning to taste; serve immediately or refrigerate for up to 3 days.
