  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 1 tablespoon Sriracha sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • 2 cups plain panko breadcrumbs
  • Canola oil (for frying)
  • Chopped parsley (for garnish)

Instructions

  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey for the sauce; set aside.
  2. Marinate chicken tenderloins in buttermilk mixed with Sriracha for at least 10 minutes.
  3. Prepare coating by combining flour, cornstarch, garlic powder, salt, pepper, and cayenne pepper in one bowl; beat an egg in another bowl; place panko breadcrumbs in a third bowl.
  4. Dredge each chicken piece in the flour mix, dip into the egg mixture, then coat with panko breadcrumbs.
  5. Heat canola oil in a deep frying pan over medium-high heat (350°F). Fry breaded chicken pieces until golden brown on both sides (about 3-4 minutes per side). Drain on paper towels.
  6. Toss fried chicken with Bang Bang Sauce before serving; garnish with chopped parsley.
