  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and season with salt, pepper, and half the minced garlic in a baking dish.
  3. In a bowl, mix softened cream cheese with heavy cream until smooth; add remaining garlic, onion powder, paprika, Italian seasoning, and cheeses.
  4. Spread the mixture over the chicken and top with chopped sun-dried tomatoes.
  5. Cover with foil and bake for 20 minutes or until chicken reaches 165°F (74°C).
  6. Stir in spinach, sprinkle with mozzarella, then bake uncovered for another 10 minutes until melted.
