  • 1 cup shredded carrots
  • 1 cup red cabbage (thinly sliced)
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds or chopped peanuts
  • 1/4 cup green onions (chopped)
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger (grated)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. In a large salad bowl, combine mixed greens, carrots, cabbage, cranberries, nuts, and green onions. Toss gently.
  2. Add the cooked chicken and mix to distribute evenly.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, garlic, salt, and pepper.
  4. Pour dressing over the salad and toss to coat all ingredients evenly.
  5. Serve immediately or chill for up to 2 hours before serving.
