  • 5 medium Roma tomatoes, diced
  • 1 English cucumber or 3 Lebanese cucumbers, diced
  • 1 red bell pepper, diced
  • 5 spring onions, finely sliced
  • 2 green chillies (optional), finely chopped
  • 3 tablespoons olive oil
  • 1 cup flat-leaf parsley, finely chopped
  • ½ cup mint leaves, shredded
  • 1 garlic clove, minced
  • Zest and juice of 2 lemons
  • Salt and black pepper to taste

Instructions

  1. Drain the chopped tomatoes to remove excess moisture and place in a large mixing bowl.
  2. Add the diced cucumbers, red bell pepper, spring onions, green chillies (if using), olive oil, parsley, mint leaves, minced garlic, lemon zest, lemon juice, salt, and black pepper.
  3. Mix all ingredients thoroughly until well combined.
  4. Taste and adjust seasoning with additional salt or pepper as needed.
