  • 20 tablespoons unsalted butter
  • 2½ cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1¼ cup light brown sugar
  • 1 large egg
  • Granulated sugar (for coating)
  • Powdered sugar (for icing)

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it thickens to about ¼ cup, then let cool.
  2. Brown the butter in another saucepan until nutty, then cool.
  3. Whisk together flour, baking powder, baking soda, cornstarch, spices, and salt in a bowl.
  4. Mix cooled brown butter with sugars until smooth; add egg, reduced apple cider, and vanilla.
  5. Gradually stir in dry ingredients until just combined.
  6. Scoop dough onto a lined baking sheet; bake at 375°F for 9-11 minutes.
  7. Cool briefly before brushing with melted apple cider butter and coating in cinnamon sugar.
  8. Drizzle with icing made from powdered sugar, vanilla extract, and more apple cider.
