  • 45 lb pork shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges
  • kosher salt
  • freshly cracked black pepper

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Trim and season the pork shoulder with salt and pepper.
  3. Sear the pork in a Dutch oven until browned on all sides.
  4. Whisk together apple cider, chicken stock, dijon mustard, and dehydrated onion.
  5. Add braising liquid and herbs to the pot with the pork.
  6. Cover and braise in the oven for about 3 hours, flipping halfway through.
  7. Add onions and apples for the last 30–45 minutes of cooking.
  8. Let rest before serving.
