  • 2 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 large eggs (room temperature)
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons applesauce
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped peeled apples
  • 1 cup chopped toasted pecans
  • Topping: 1 tablespoon sugar + 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, cinnamon, nutmeg, salt, and baking powder.
  3. In a large bowl, mix eggs, sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined. Gently fold in chopped apples and half of the pecans.
  5. In a small bowl, combine remaining pecans with sugar and cinnamon; sprinkle over the batter.
  6. Bake for approximately 55–60 minutes or until a toothpick comes out clean. Allow cooling in the pan for about 10–15 minutes before transferring to a rack.
