Instructions

  1. Preheat your oven to 375°F and prepare a 9-inch pie plate with nonstick spray.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
  3. In another bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms.
  4. Fold in chocolate chips, M&M's, and sprinkles gently.
  5. Spread the dough evenly in the prepared pie plate and bake for 17–18 minutes until golden brown. Cool on a wire rack.
  6. For frosting: Beat softened butter with salt and vanilla until creamy. Gradually add powdered sugar and whipping cream until fluffy.
  7. Once cooled, decorate the cookie cake with frosting using a piping bag and finish with sprinkles.
